Baked New York Cheesecake Recipe

As promised here is the recipe for the DIVINE Cheesecake pictured below in an earlier blog. Is is possibly the easiest recipe I have and almost fail proof so give it a whirl.

New York Style Baked Cheesecake with Berry Confit

250g Cream Cheese

250g Ricotta Cheese

250g Cream Fraiche

1 C Caster Sugar

1/4 C Cornflour

3 Eggs

1 Tbsn Finely Grated Lemon/Lime zest

Juice of 1 Lemon

Preheat oven 160 degrees. Line springform tin well with baking paper. Place all ingredients in a food processor and process until the mixture is smooth and creamy.

Pour into springform tin and and bake for 1 hour. The Cheesecake should be golden and set.

Cool in tin on wire rack before popping out on a plate.

TOPPING
500g Berries of your choice

1 C Apricot Jam

Juice of half a Lemon

Dissolve jam gently stirring in a pot over low heat until liquid, add Lemon Juice and stir, Pour over berries and cool.  When cold and ready to serve the Cheesecake, spoon the Berry mixture over the top of the Cheesecake and serve immediately. The Berries will look  glossy and gorgeous on top of the golden Cake….DEVOUR!
